Pahadi Biryani Masala is a spice blend inspired by the flavors of the Himalayan or “Pahadi” regions, particularly from Jammu & Kashmir, Uttarakhand, Himachal Pradesh, and nearby hill areas. It brings a unique, earthy, and aromatic taste to biryani, distinctly different from traditional Hyderabadi or Lucknowi biryani masalas.

🧂 Common Ingredients in Pahadi Biryani Masala:
Coriander Seeds, Cumin Seeds, Black Peppercorns, Fennel Seeds (Saunf), Cloves, Black Cardamom (for smoky depth), Bay Leaves, Cinnamon Sticks, Mace (Javitri), Nutmeg, Stone Flower (Dagad Phool), Dry Ginger Powder, Garlic Powder or Sun-Dried Garlic, Mint or Dry Pudina Leaves, Red Chilli (Kashmiri or local varieties for color and mild heat)
🍚 How It’s Used:

Add to marinated meat (like mutton or chicken or your favourite vegetables) along with yogurt and mustard oil.

Layer with partially cooked rice while dum cooking the biryani.
